Helen Staines was raised in a small village in the countryside of Yorkshire, England. Growing up, Helen’s parents loved to travel and they spent their vacations exploring different countries in Europe. Through these travels she was exposed and encouraged to try a multitude of varied cuisines. This was where her love of food and travel began. When Helen decided to move to Canada in 2001 she had originally planned to move to Vancouver but decided to make a stop in Winnipeg first and has been calling it home ever since.
Decadence Chocolates came following an unsuccessful attempt to make truffles and treats one year as Christmas presents. Everything tasted fabulous but they did not look very good. The experience, however, made Helen realize how much she enjoyed the process and decided to learn more. She started by taking an online course through Ecole Chocolat which taught her the history and the process of handling chocolate as well as the creation and decoration of chocolate bon bons. In 2015 she furthered her studies by taking two further courses at the Callebaut Institute in Quebec on how to make chocolate from the bean. They now are a small batch processing single origin chocolate that they sell by the bar. Visit Helen in store to see and smell this process in her open kitchen.

New and unexpected flavours aren't always created ... sometimes they just happen and a new favourite is found.
